Kitchen Manager

Reports to:
GM, Executive Chef, Culinary Director

Position Objective:
Example: Our Head Chef is the senior kitchen manager on site, and as such, they are the backbone and leader of the kitchen as a whole. Their primary focus is the oversight of daily operations and the communication with Sous chefs and line staff. This position also oversees food and labor costs. They will maintain the tone and vibe as related from Land and Sea Dept.

Essential Duties and Responsibilities:

Oversight of Staff and Management:

Help maintain employee records for health department, Servsafe certifications
Know how to use the order sheet and what vendors all our goods
Maintain professional appearance at all time, attitude and appearance
Foster good working relationships with all employees on site including FOH and BOH

Oversight of Sales and Profitability

Maintain food & labor cost inline with budget and forecasting

Oversight of Property

Keep property to cleanliness and maintenance standards
Have working knowledge of KDS system
Maintain a clean work environment throughout the shift including clean floors, work surfaces, and equipment
Observe all city of chicago food safety guidelines
May perform other job duties as they arise
Must be able to lift 40 lbs and stand for extended periods of time
